Using cream cheese as the base for this creamy soup in ingenious! It comes out so creamy, rich, and tasty, and melts into everything perfectly. I have had bad luck in the past with shredded cheese, as it can sometimes get stuck all over the bottom or "separate" from the rest of the broth. Using the frozen potatoes and leftover ham cubes is a real time saver!
