This recipe sounds so delicious, but I am not a fan of black beans. Could you substitute any bean for this dish? I prefer navy beans or even pork and beans, but I am afraid that it might too much away from the dish. Thanks for sharing an easy dinner to make for the whole family.

I would use pineapple tidbits or even pineapple chunks for this recipe. I like to add fresh pineapple wherever possible. I find it has a better taste and isn't as sweet from the syrup. I like to pair up pineapple with green and/or red peppers, where appropriate. They make a nice match in sweet and tangy dishes.
