I found this recipe at the perfect time. I am grocery shopping tomorrow, and I was looking for a new recipe for our "Taco Tuesday" meal. I love how chicken turns out when it's been cooked in the slow cooker. I wish I had discovered that process twenty years ago! My family will love these enchilada stacks served with sour cream, salsa, and guacamole.
