I can see adding or omitting just about anything your heart desires with this casual recipe. Make it to suit your own personal taste. For me, I would add a small can of diced chiles. When I plate it, I would add a big dollop of fresh sour cream, too!

This recipe is on my menu for next week. I absolutely love anything (but especially Mexican food) with black olives. I am questioning the flour tortillas. I would think they would get soggy, but hey, maybe not. I would be inclined to use corn tortillas. I could be wrong in how they would cook. Has anyone made this with flour and/or corn tortillas?
