I love the cilantro lime ranch dressing that is used in this casserole - I plan to make it often for dishes like this and also salads. It would be awesome on a grilled steak or chicken entre salad or even a taco salad! When I make pulled pork, I always like to make a really big batch so I can use the leftovers for quick no fuss meals like this!
