Smothered burritos, here I come! Wet burritos are my husband's favorite thing to get at our favorite Mexican restaurant, and I cannot wait to surprise him with this recipe! I'd add shredded lettuce, but not on the inside since it would wilt into nothing. I'd serve these on a bed of lettuce like I do when I make enchiladas. It sort of absorbs some of that extra yummy sauce and makes it less messy to eat at the same time!

I love burritos, but usually make them with chicken or ground beef. This sound good and hearty and I like the idea of adding refried beans and sticking them in the broiler at the end. I would top then with lettuce, tomatoes, olives, and sour cream, and serve a Mexican rice on the side.
