Especially in the winter months, when the store bought "fresh" tomatoes are practically flavorless, it is perfectly acceptable to use canned tomato products for sauces like this. They are picked and canned at the peak of ripeness, and are full of rich bright flavor. I am pleased with the anchovy paste and wine in the sauce - it gives it a sophisticated complexity while not being detectable by the picky ones!
