I am the same way aketch, I think that I would switch it up and use broccoli too, but we would have to make a double batch and cook the veggies separate because there are eight of us. Do you know how long it would take to cook eight pork pieces without the veggies?

I like the layering effect of this recipe, and that the different foods are kept separate and not all mixed up together. You can mix them up however you wish when serving. If you don't like brussel sprouts you can use another vegetable. I would try beets or broccoli.
