Now THIS looks interesting! I love the idea of the spiciness from the Jalapeno and the sweetness of the pineapple. I could see this being amazing over rice, on a salad, or even wrapped up in a toasty tortilla!

Excellent dish! I made this just as your recipe describes, except I used more jalapenos. It turned out perfectly, even in my old, non-programmable, high/low crockpot. This is a very quick and easy recipe that gives wonderful results. I mixed some of the leftovers with cooked rice and stuffed some tendered poblanos with it. Presto! A quick lunch for a hard-working Husband.
