Nice recipe, however it could be very fatty and high cholesterol depending on the cut of pork you use. I like to boil/braise/or stew the meat first and let it cool completely in the broth in the refrigerator. Then I pick out the hardened fat that floats to the top of the broth, leaving the flavorful broth for beans or whatever. Use a ham bone this way if you want some very flavorful, low-fat great northern bean soup. I prefer using diced fresh onion/garlic. At our house we like about half a pot of beans and half a pot of new potatoes... there is often enough ham in the mix that it makes a one-dish meal.

Oh my goodness! Let us all just imagine the flavor in these Southern style green beans. Let us imagine the smells coming from the kitchen. Do you usually put pork or pork fat in your greens? Just a quick survey. I am new to that idea. I guess that is what makes this a Southern style green bean dish?
