Creamy Tomato Soup with Parmesan
"I love that this recipe uses fresh tomatoes, throws them in the slow-cooker with a few carrots and other vegetables and makes soup while I'm at work. I don't peel the tomatoes because the soup will be blended later anyway. After six or more hours on low heat, puree the soup, add some crushed garlic, cream and parmesan and dinner is ready to go. I like to serve this a crusty baguette or grilled cheese for the kids."

I have a ton of tomato plants growing in my backyard each year, and when they are all ripe at once it can sometimes be difficult to use them up before they go bad. Slow cooker soup is one of my favorite solutions for this, since it is so easy! You can even freeze it in mason jars to enjoy in the winter!
