We have a Mexican meal about once a week, and we love nachos! This soup sounds very good and so easy to make. I am happy to have a new soup recipe to try because there is still a lot of winter to go What a creamy and crunchy soup this will be. I'm sure we will love it!

My husband is not much of a veggie guy, and therefore is not really a big fan of a lot of the soups I make at home. All that changed the other night when I tried this soup recipe. He absolutely loved it, and so did I! When you are craving something Mexican, this is a much healthier option, and easy to make!
