Have made this but I did enhance the recipe.. the butter sour cream were purchased online.. Mozzarella company..... Google them.. Then I made grilled cheese sammmmichs with "Hoffman's" smoked cheddar cheese and texas toast..

I had my doubts before making this creamy soup, as I thought the sour cream would make the soup too tangy or sour tasting. I had never really seen sour cream in a soup before, only as dollop on top at the end as a garnish. I was pleasantly surprised, as it comes out tasting just like a loaded baked potato a bowl! Ham would definitely be a great substitution for a healthy swap out. I don't know about using light or fat free sour cream as the broth might "break" or form curds.

This looks delicious, but to lighten it up I plan to use light sour cream and the reduced fat cream cheese. I think it would be good, but lighter, with diced ham instead of bacon. Anyone try this?

I have never made potato soup, but wow, this looks amazing. It looks so creamy and tasty, topped with cheese and bacon. I'm adding this to my list of meals for next week. It will be great to have this in the slow cooker, ready for dinner on a cold weeknight.
