Do you use just plain diced tomatoes, or do you like the kind with garlic and oregano or basil? I like the kind with the flavoring, but some recipes call for it and others just want the tomatoes. My mom's secret is to always add a pinch of sugar to fresh tomatoes to take away a little of the tart flavor.
