Loving the fresh grated carrots in this dish. Carrots are fast becoming one of my go-to slow cooker vegetable picks. I agree with the post below about broccoli would be great, too. I like to slice mine lengthwise and leave them with the stems included! It is my favorite way to enjoy broccoli in beef dishes that are Asian or Asian inspired.

The homemade Asian - style sauce for this recipe is very versatile! You could easily throw in some bite sized pieces of boneless skinless chicken thighs or even pork shoulder in place of the beef, and it would be a fabulous dish! If you want more veggies in it, broccoli florets or sliced red bell peppers would both be great things to add!
