Where do I find the chipotle peppers? Are they with the banana peppers and chile peppers in the condiment aisle, or would I be more likely to find them in the aisle with the Mexican foods? I like the addition of cumin to the dish because it has such an earthy flavor and a robust taste when used with beef.

This is by far one of the best barbacoa recipes that I have ever tried! When serving a large group, I would probably only use about half of the cloves, since the flavor can be quite powerful. But I like it with the cloves as they give it a real authentic and unique flavor. The meat turns out melt in your mouth tender. I love it over rice, atop Mexican pizzas, in tacos, on nachos, or even in lettuce wraps. It is so versatile and has become a weeknight staple in our home. Would also be great on a sandwich. Tortas anybody?

Yea! Another meal to fix when we have Mexican food. I've never thought of cooking a roast to shred for tacos or nachos. We usually have ground beef or chicken. I love the sound of the spiciness of this and I like that it could be served as a Mexican dish, or with mashed potatoes or rice.
