Where did you get the idea to add zucchini to this recipe? My mom uses it in all kinds of dishes, even chocolate cake because you cannot taste it in anything you use it in. I love it! I also love the use of mozzarella cheese in this dish because no one seems to use cheese on their meatloaf. I like to stuff mine with it too.
