How much dried thyme can I use in this dish if I cannot get fresh thyme? I think the balance of veggies, spices, and meat sounds very proportional in this dish. I want to make this for a special Sunday dinner for my family. I think everyone will ask me to put it on the menu again.

I do not like garlic, so I left out the cloves. I also added more potatoes, otherwise I made it like the recipe stated. It was definitely a winner!
