I used to visit this little diner up north that was made out of an old railroad car, which was quite famous around here back in the day for their homemade soups. It has long since went out of business, but this soup tastes just like the kind they had there. I love how chuck roast is used - no cutting corners with ground hamburger. It is chock full of fresh veggies, and since it has no pasta, the leftovers freeze wonderfully. A must try!

Vegetable beef soup is one of my go-to recipes for the winter. I usually make it on the stove, but the slow cooker would be much easier!

Could you use some rice wine vinegar or something like beef stock to get the bits of goodies out of the skillet instead of using just water? I think that water does not do as good a job deglazing the pan as other things like stock or cooking wines and vinegars. I love the fresh veggie choices you made with this dish.
