    Paleo Orange Chicken (For Your Slow Cooker) is an easy orange chicken recipe that, paleo or not, is sure to become a new family favorite. Paleo slow cooker recipes, like this one make great dinners you can be proud of. Made with a cauliflower "rice," you'll be able to enjoy a great Chinese chicken slow cooker recipe even without the addition of white or brown rice. This unique recipe will make you a super versatile chef, and give you options to make whether you're keeping a paleo diet or simply trying to be a little healthier.

    Ingredients

    • For the Sauce:
    • 1/3 cup coconut aminos (soy-free seasoning sauce) (See note)
    • 1/3 cup honey
    • 1 tablespoon orange juice concentrate or 2 tablespoons fresh orange juice
    • 2 tablespoons tomato paste
    • 1 tablespoon sesame oil
    • 1 tablespoon finely minced fresh ginger
    • 1 tablespoon finely minced fresh garlic
    • 1/2 teaspoon red pepper flakes, or more to taste
    • 1/2 teaspoon salt (see note)
    • 1/4 teaspoon ground white pepper or fresh ground black pepper
    • 2 pound boneless chicken thighs
    • For garnish: sliced green onion and 1 tablespoon sesame seeds

    Instructions

    1. Prepare a slow cooker by spraying the interior of the insert by wiping lightly with olive oil.

    2. Combine all sauce ingredients in a mini food processor or blender and pulse briefly to combine. Pour over the chicken in the cooker insert and toss to coat well. Cook on low for 4 hours.

    3. When ready to serve, remove the chicken and break or cut apart into bite-size pieces.

    4. Remove the sauce to a small saucepan and taste it you may wish to add a bit of salt or chili flakes or honey to balance the flavor (see note). Cook over medium high heat, boiling until it reduces and thickens. You may choose to thicken it slightly by adding 1 teaspoon arrow root mixed with 1 teaspoon water and cooking on low until it thickens. (see notes)

    5. Recombine the chicken and the sauce and serve over Coconut Cauliflower Rice, garnished with green onion and sesame seeds.

    Notes

    1. After cooking, taste the sauce and adjust the flavor to please your taste: if it is not already salty enough from the aminos or soy you used, add a bit of salt. If it is too spicy, add a bit of honey. Or add more chili flakes or a drop or two of hot sauce to make it more spicy.

    2. If you are not following a strict Paleo diet, you may choose to use low-sodium soy in place of the coconut aminos, and use cooking spray on the cooker insert, and use cornstarch thickener for the sauce. Make a mixture of 1 teaspoon cornstarch and 1 teaspoon water and stir this into the sauce, then cook on a low simmer until the sauce thickens.
