I absolutely love the flavor of coconut in curry! Instead of soybean oil for sauteing seasonings, I often use coconut oil then add curry powder and the other ingredients. Adding some freshly chopped ginger to the mix of seasonings while sauteing gives the curry quite an exotic flavor! I find that coconut oil heats up faster than other oils and begins to give off smoke so use a lower temperature if sauteing with coconut oil.
