Three Bean Salsa Chicken and Rice
This is a nice recipe for a casual weekend dinner party with a Mexican theme. It has a lot of personality and will thrill your guests who truly enjoy Mexican cuisine. Feel free to either whip up a batch of your favorite homemade salsa or simply pick up your salsa brand of choice at the local grocery store. You combine the salsa with broth and green chiles in your slow cooker, then you add your three types of beans. Finally, you will add your cubed chicken pieces into the dish. You can turn on your slow cooker before you leave for the day and when you return a wonderful Mexican fiesta awaits you. Pair your chicken dish with some rice. Your guests may also enjoy some margaritas with their meal.

Im not a big fan of plain beans but do like them in certain dishes like chili. We are usually blessed with an overabundance of Juliet tomatoes from our garden, so we also make a wide variety of homemade salsas. Be sure to rinse the canned beans before using them, or you can cook batches of beans ahead and bag them for the freezer. Try using mayocoba beans in place of the cannellini for a more authentic Mexican dish.
