This cheesecake recipe is perfect for when it is too hot to cook. I have no dietary restrictions for gluten, but I have been using almond flour a lot more recently simply because I like the little bit of nutty flavor that it brings to a dish. I just had a question. What exactly is erythritol? I have never heard of it before. Is it a sort of thickening agent?

This cheesecake recipe sounds like it will be so delicious. I love cheesecake, and this one is made with so many fresh ingredients. I like that it is from scratch because it just tastes so much better than if you bought a mix and put it together and in the crock pot it goes til done.
