Apple Cider Braised Pork

Do you use fresh or dried mustard in your recipe? Can you use apple juice instead of the apple cider if it is not in season at the time? I want to make this, but I am not sure if I can find the cider right now. I know the apple cider vinegar is not an issue, but I have not seen apple cider for a couple of weeks now.
