I love that you put two recipes on the same page. What other cheese do you think I can use instead of the goat cheese in this dish? I have never used the cheese, so I am hesitant about trying it. I think the enchiladas sound amazing. I can see making two batches of this for lunch and a special dinner. I can just split up my roast and make one two different days this week.
