Is there a special reason that you peel the tomatoes? Does it help them crush better? I love using the peel to get as many nutrients as I can in the dish, but if there is a special reason I should peel them then I will. I love that you use the tomatoes with the pork because you do not see so many recipes that combine pork and tomatoes.
