If I don't have the red wine, can I use red wine vinegar, or something else like chicken stock to replace the wine? I want to make this dish because I have never tried to make a pork and tomato dish like this at all. I love the way it sounds because of the mix of flavors. I would not think to use tomatoes with pork as a first choice, so I want to see how this turns out.
