I really appreciate that this chicken isn't swimming in an entire bottle of Frank's Red Hot sauce! That stuff can be a little too spicy for a lot of folks, and also hides a TON of sodium! I am trying to cut out the salt a little bit in my diet, so this is a good option for me. I like to put it inside lettuce wraps, and top it with finely diced carrots and celery!

Do you find that the chicken is much moister when you use a combination of the light and dark meat? I love to cook meals this way, but my family prefers to only use the breast meat. We like to make a chicken and rice recipe with cheese. Thanks for the tasty idea.
