I do not have one of those single serving lunch crocks, but I plan to double this recipe and try it in my regular crock pot for a quick dinner for two! Perfect for those really hot summer nights when you don't feel like spending time in a hot kitchen! It is so light, fresh, and healthy!

This recipe looks and sounds delicious with mango, coconut milk and shrimp.The recipe serves one, but I would like to make it for 2 or 4 people. Any thoughts on doubling or quadrupling the recipe? If I make a double or quadruple recipe, can I use my regular slow cooker? I would love to try this recipe, but it looks too good not to share.
