Between the browning and stuffing of the bell peppers, the water bath they sit in as they cook in the oven for what feels like forever I find half the time I still end up with bell peppers that are not as tender as I want them."

I actually think that I like this soup better than I like the baked stuffed peppers! When I eat a whole pepper like that, it sometimes doesn't agree with me, digestive - wise. This is so easy, and the leftovers are even better the next day or frozen for a convenient meal later!

I LOVE stuffed peppers, but I never thought to do them in a soup! I am really looking forward to making this on the weekend. I'd like to make a big batch this looks like it would be perfect for leftovers.
