I love how simple and rustic looking this dish is. The veggies are cut up into rather large chunks, which saves a lot of extra chopping, and since it uses the red skin potatoes and baby carrots, you don't even have to do any peeling! A great no fuss homestyle winter meal that will really warm you up!
