Canned Fish and Rice Soup
"Even whimsical children will like this flavoured canned fish and rice soup. This dish is very tasty and dietetic enough, so it will suit everybody who looks after his body and avoid extra calories. You can take any canned fish in oil: mackerel, sardine or saury. Also, vegetable broth or just cleaned water will be good to use instead of chicken broth, then the soup will be even less caloric. Ingredients: Water 2 l; Chicken skeleton 1 pcs; Potato 5 pcs; Rice 3 tbsp; Carrot 1 pcs; Onion 1 pcs; Canned fish 1 pcs; Dill - to taste; Parsley - to taste; Salt - to taste; Black pepper 0,25 tsp; Paprika 0,25 tsp; Bay leaf 1 pcs; Olive oil 2 tbsp."

Whenever I roast or rotisserie a chicken, I always keep the carcass and stick it into the freezer in a Ziploc bag, since it makes a great homemade broth - much more chicken flavor and less sodium than the stuff in a box or a can. I have made a Cioppino before, or Italian fish stew, but have never thought about using canned fish in a soup. I will surely have to try it. I think I'll use canned salmon, as I am not a big fan of sardines.
