This is a great recipe for beginners, and is very economical! Since you are blending up the soup at the end, you don't need any special knife skills or a lot of time to spend chopping the pumpkin and the vegetables. You could use chicken or even vegetarian boullion in place of the beef if you prefer. It might be fun to top it with some de - shelled pumpkin seeds for garnish!

I have never tried pumpkin soup before but I do like pumpkin pie. This is an easy enough recipe to make and a nice hearty warm soup fora cold day and a great way to try something new. This would be a great lunch to have when you invite your girlfriends over for a get together on a cold winter weekend. Serve with a nice warm piece of fresh bread. Thanks for the recipe.
