    A meatless taco casserole recipe? Fantastic!

    This taco casserole recipe looks amazing, and super easy! There are so many recipes out there that require a programmable slow cooker that I am going to have to start looking for one. Does anyone have any suggestions for a good one? I will have to look them up and go from there.

    I am so glad to see a really good vegetarian version of this recipe! It is so hearty and flavorful - perfect for meatless Mondays or just to be a healthier meal option! This stuff would be awesome over some seasoned yellow rice, or even wrapped up in a whole wheat tortilla!

    Wow , this is a good looking recipe. I am afraid it will be a bit too hot for me, but I can modify it to make it a little bit milder. I love anything like a taco, enchilada, or burrito recipe. We will enjoy it with some guacamole on the side.

    This recipe looks amazing and is making my mouth water! Since I am watching my weight, I would substitute 1/3 fat cream cheese and reduced fat cheese-but NOT fat free cheese! My experience with that in the past has shown me that it does not melt. Another variation is to use yummy pinto beans.
