No one in my household is vegetarian, but we all love this chili recipe. I might even add chickpeas to the dish and toss it with some hot whole wheat pasta for a complete meal. I was unsure about the butternut squash at first, but the squash gives it a slightly sweet contrast without being overwhelming. A wonderful, warming Fall dish!
