I recently ordered a bowl of vegetable beef soup at a local family restaurant that looked really similar to this recipe. When it was brought to my table I was unsure how it would be, since it really didn't look like a soup at all - it was thick and it looked like more of a stew or a chili to me. It was absolutely delicious! The ingredient list in this recipe looks quite similar to what was in that dish, so I plan on trying this recipe soon!
