Beef stew is one of my favorite things to cook in my crock pot, so I think this jazzed up southwest version would be really fun to try! I think it would be really good topped with some diced avocados and fresh cilantro! I find that the Yukon gold potatoes work best in slow cooker soups and stews since they stay more firm and are less mushy.
