This is one of those dishes that you can literally feast on all day long. With the vegetables, meat, and rice, along with the dairy in the cheese, you have a balanced meal, although not very health conscious, but delicious. I can see doubling this and letting the kids make quesadillas or burritos with the leftovers for lunch the next day.

I love these kind of recipes. The beef and rice with enchilada sauce and melty cheese is making my mouth water. It's got your protien, your dairy, your vegetable, and then you'd serve it with chips- so you have an entire well-rounded meal! You could even whip up some cornbread to serve along side. I now know that I need this 5-in-1 slow cooker for my upcoming birthday.
