Can I just use potatoes instead of the mushrooms in this dish, or maybe some celery? I am allergic to mushrooms. Teriyaki is one of my favorite dishes to make with stir fry, so I am sure it will work out great in this dish too. I love the use of the meat and sauce over fresh rice.

This looks pretty good. It would be perfect for days like today, when we had plans to BBQ steak and it is raining outside all day. I love to combine beef with mushrooms and onions. I would omit the soy sauce to reduce sodium content. There is lots of flavor in the meat and in the other ingredients.
