How tasty would this still be if I replaced the whole eggs (YUMMY!) with egg whites? Also, can I say that I personally think the soyrizo is just as delicious as the real thing without the fat and the guilt! If you haven't tried soy chorizo yet, this dish would be a great place to start because there are other ingredients in it- and you won't be so focused on whether or not it is real pork or not. Trust me on this one! My husband is Mexican and he even eats it.

#BestIdeaEver I was very late getting a slow cooker - I just got one this year for the first time - and I'm always looking for new things to try. Now that it's summer, most of the dishes I've been making are too heavy and winter-y, but I like to have a high-protein breakfast and this sounds delicious. It would definitely get me through many hours of the morning and early afternoon! I love all those ingredients, except I would probably use Portuguese linguica instead of chorizo.
