This is such a great way to take advantage of the fresh flavors of the summer season! It has such a great array of colors and textures to it, and is full of flavor! I served mine with some yellow Spanish rice since I did not have any quinoa or farro on hand, but it was great! This dish is great hot or at room temperature, so it would be a great thing to bring with you for a picnic lunch outside!
