Barbecue Pulled Chicken

Low-fat doesn't have to mean low-flavor. This barbecued pulled chicken is clear evidence of this. This low fat slow cooker recipe has more flavor than some high fat, high sodium foods.

Slow cooker recipes are the best! You can get everything together in the morning, throw it in, and have a delicious meal ready for you when you get home. That being said, I noticed this recipe says to cook on low for about 5 hours. Since I'm gone about 9 hours at work, would it be acceptable to leave for 8 hours or so on low? My crockpot is not programmable, it only has the settings for 8-10 hours on low, or 4-6 hours on high. I would not want the meat to be too dry!

Hi elcoin1104, yes, I think 8ish hours on low could work. Since this recipe has a fair amount of liquid and it uses chicken thighs - rather than breasts - I don't think you'd need to stress about the meat getting too dry. - Natalie, Editor of AllFreeSlowCookerRecipes

This dish looks amazing, both me and my partner adore dishes like this, it helps that it's low is fat too. I am a complete novice when it comes to using a slow cooker, I only got it at Christmas and am yet to use it. I have never seen or used the 'slow cooker liners' that are mentioned in this recipe, has anyone used them before? Are they any good? Are the expensive and finally is a slow cooker hard to clean?

Hi Catsitt, here is an article we have about slow cooker liners: https://www.allfreeslowcookerrecipes.com/Cooking-Tips/Tips-on-How-to-Use-Slow-Cooker-Liners. Slow cookers are not usually difficult to clean, but the key is to soak the crock with warm soapy water soon after you use them. - Natalie, Editor of AllFreeSlowCookerRecipes

I am a college student who appreciates a simple, but flavorful meal more than almost anything. So when one of my roommates received a slow cooker for Christmas, I couldn't wait to get my hands on it and make a real meal for our house. This recipe looks and sounds mouthwateringly delicious, not to mention the fact that it is also low-fat. As soon as I can get myself to the grocery store, I can guarantee that this meal will be the first one I make for my next dinner.

The receipe sounds great going to try to make it. My question is on the boneless chicken thighs do you leave the skin on or take it off?

Hi Member 6253663, the recipe calls for the skin to be removed and the fat to be trimmed. However, you don't have to remove the skin. Chicken skin will give the recipe a richer flavor, but it won't be as healthy. - Natalie, Editor of AllFreeSlowCookerRecipes
