Sounds delicious! I imagine the sour cream makes that chicken, beans and corn combo all nice and creamy and with a slightly sweet taste. This is truly an EASY weeknight recipe. I would shred the chicken in the crock, then plan on serving it with a stack of fresh corn tortillas. We can spoon the chicken into our tortillas. Yum!
