    This a great recipe for pork enchiladas. Make a Mexican-themed night during the week and thrill your family with this very tasty and satisfying dish. Pork Verde Enchiladas is made with both a slow cooker and an oven. You make your shredded pork in the slow cooker with beer, seasonings, and some liquid smoke all day.  Later after you stuff yoru enchiladas with it, you will bake them in the oven to finish off your dish. It takes a little practice to stuff your easy slow cooker enchiladas. But you should be able to handle it. This delicious dish will be a keeper at your house.

    Do you think this would taste good with Rotel instead of the green enchilada sauce? I guess I could just use the red sauce instead too. I love that you use the pork shoulder for this recipe. I think the cut gives it a much juicier flavor profile. It sure sounds delicious.
