Have you ever used red onions in this recipe? I love the rich flavor they give to a bean dish. I think they really help boost the taste of the other flavors while adding a sweet note. I use yellow when I am out of the red, but I prefer the latter.

This recipe for beans really sounds yummy. Cooking the beans in a slow cooker would make it easier with less hands on work. The side dish could be made into the "starring role" of dinner or lunch with the simple addition of bacon or ground beef. I also like the idea of using dried beans to make this, making it a very frugal recipe indeed. What would you add?
