Cranberry Sweet Potatoes

Ingredients
- 1/4 cup orange juice
- 8 tablespoons butter (1 stick)
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 4 to 5 pounds sweet potatoes, washed, peeled and cut into 1-inch pieces
- 1 cup sweetened dried cranberries
Instructions

In slow cooker, mix all ingredients except potatoes. Cover and cook on HIGH while preparing potatoes.

Stir potatoes into warm mixture, cover slow cooker and cook on HIGH 3 to 4 hours.

Once potatoes are soft, stir to mashed consistency.

Cranberries and sweet potatoes together in one dish...Yes please! Maybe instead of mashing the sweet potatoes they can be cut into chucks. Then if a crumble was made with the cranberries, some pecans, brown sugar, oatmeal and of course butter...and allowed to cook into the sweet potatoes, it could leave a yummy candy like topping with a twist...then for if only a moment, all would be right in the world.
