This Mexican rice dish makes a great vegetarian main dish, and also pairs well with barbacoa or pulled pork in a taco or a burrito. I have 2 crock pots, so I like to do a 2 pound pork loin roast in one and a mexican rice dish in the other. On a busy weeknight, everyone can just serve themselves when they want to eat, and the leftovers make great healthy lunches throughout the week!
