I have to agree that I have no idea why they are called Irish either, but I am sure ready to them. I bet they would taste great with the ideas that kmcartoonity mentions, right? I can see using a variety of herbs and making these potatoes different every time.

This is a pretty standard basic potato recipe with lemon, parsley, and dill, but I am not sure why it is referred to as Irish. If I have them on hand (I usually always do as I have an indoor herb garden) I would surely opt for fresh dill and fresh flat leaf parsley for the herbs, especially since you are dressing up something very basic. The difference in flavor and aroma will astonish you!
