I love that you use celery and green peppers in this recipe. Can you use a polish sausage in place of the Andouille? I never use the one, but I always have polish or smoked sausage in the freezer. I was thinking that I could make a full meal with a side of rice like you show in the picture. I think this would be very tasty, if not for dinner, then for lunch.

This is a great no - fuss recipe for when you're in the mood for something warm and comforting. You can use any type of red bean for this - I have used small red beans and pinto beans before and it turned out wonderfully. If you want a little more heat, you can use a poblano pepper in place of the plain green bell pepper.
