Harvest Slow Cooker Beef Stew
On a cold night in December this slow cooker beef stew will warm you up and fill you up with delicious ingredients. Harvest vegetables, including healthy carrots, celery and potatoes, make this stew mouth-watering along with the beef, which literally falls apart in the juices while it cooks. This recipe is easy as can be. You throw all of the ingredients in the slow cooker, except for some earlier preparation for the meat, you are good to go. It is comforting to know that while you are at work your dinner is cooking and ready for consumption the moment you get home. Slow cooking makes for fast eating.

I think there is a typo in this recipe, since it calls for a 12 pound beef roast. I figured it was supposed to be 1 to 2 pounds, so I went with a 1 1/2 lb. roast. I love the fact that you don't have to peel onions or potatoes, and if you use baby carrots, you don't even have to chop or peel those either! I think I will use chicken broth next time in place of the water for a little more flavor.
